Veggie Roast
Here is a really delicious treat:
Set an oven to preheat to 200 deg
Meanwhile,
Wash and peel 2-3 carrots, 1 sweet potato, 1 radish and then cut them up into medium round slices
Wash and cut 1-2 zucchinis into medium round slices
Wash and cut 1-2 tomatoes and 1 medium potato into chunky thick round slices
Wash and cut up a broccoli into chunky florets
Peel 1/2 a small pumpkin and cut into small chunks
Feel free to add of delete any veggie you like, red, yellow and green bell peppers (capsicums) cut into chunks also bring a delightful flavour and colour to this dish... You can add any chunky vegetable to this, but not something like say okra (bhindi)
Grease a baking tray with a little butter and artfully decorate the veggies in it, drizzle some olive oil on them and sprinkle a bit of salt...
Put in the oven for about 30-40 minutes until the veggies are all well done. 10 Minutes before they are ready you may add some pieces of mozzarella (pizza) cheese, and keep in the oven until the cheese has melted and become golden brown...
Serve piping hot right out of the oven after decorating with a few basil leaves or sprigs of rosemary, with toasted whole wheat bread!

Talking of whole wheat bread, recently I did an Ayurveda Nutrition course, at which we were told that even most of the regular companies which sell "whole wheat bread" adulterate it with 60% (or so, I forget the exact percentage) maida and only a relatively small percentage is wheat. Apparently, whole wheat bread tastes horrible and is practically inedible ! Sorry for the bad news ! but I've been in a quandary too ... it doesn't seem like there are too many things out there for us to eat !
Your recipes would therefore be invaluable, but we have to actually go *do* these things ... uff!
